Northwest Bay PROBUS | Taste of Morocco – Cooking Demonstration
On Friday, Nov. 10th, sixteen ‘foodies’ from our Club joined Cathie Hamilton (guest chef) around the kitchen at Worldly Gourmet Kitchen Store in Ladysmith for an evening of cooking out of Africa.
With a glass of wine in hand, each of us watched and listened as Cathie prepared a three-course Moroccan chicken dinner using traditional cooking methods, as well her own cooking and preparation tips. Cathie regaled us with stories from her background as a culinary scientist who ran her own cooking school in New Zealand, and as the development chef for White Spot Restaurants.
Cathie is also a fully certified food safe instructor and has developed all the recipes used in her cooking classes. She was the first Canadian to become a Certified Culinary Scientist. Her well-balanced, delicious menus show her professionalism and love of cooking.
We learned the secrets to balancing out the wonderful combination of flavors that so represent the Moroccan cuisine, and got to indulge with a tasting of all food created during our cooking demonstrations.

We did truly feel worldlier, as we walked away with full tummies, a copy of all the recipes and knowledge of a where to purchase spices, cookware, and preserves to make a fabulous Moroccan dinner.
